Vegan Sweet Potato, Ginger and Coconut Soup

One of the things I love to gift to people at birthday’s and Christmas’s are Spice gifts with a lovely recipe attached for them to enjoy.  People often don’t have just what they need spice wise for a recipe but if you pick a gift set carefully and make sure that the recipe uses those spices, you are giving them a great gift!

Cooking is relaxing and induces a sense of wellbeing and pride – what’ not to love about giving a foodie gift they have to work for! ( and of course helping them rediscover their own creative streak)

One of my personal favourite spices is ginger and oh, do I have a lovely recipe for you using ginger today – the spiced soup gives this a lovely warmth and it is just perfect for cold winter days.

It keeps beautifully in the fridge for up to 3 days – if it lasts hat long though of course,.. it is definitely a bit moreish!

Sweet Potato, Ginger and Coconut Soup (serves 4)

 

Ingredients

  • 600g peeled, diced sweet potato (1cm by 1cm)
  • 1 large white onion
  • 2 teaspoons garlic puree
  • 1 teaspoon of ginger powder or 2 teaspoons of ginger puree
  • Fry Light
  • 2 tbsp Thai red curry paste
  • 300mls Coconut Milk
  •  l litre water
  • 2 vegetable stock cubes
  • Pumpkin seeds

 

Method

  1. Dice onion into small chunks, add to frying pan sprayed with fry light.
  2. Add garlic puree to onions and  saute them till onions starting to colour.
  3. Add the rest of ingredients to the frying pan and bring to the boil.
  4. Simmer  for 20 mins on a medium heat.
  5. Pour soup into blender or use hand blender to make it smooth.
  6. Add extra water or milk if too thick.
  7. Add a handful of pumpkin seeds as a topping if desired.= or /and a dollop of dairy free Coconut yogurt.

This soup is warm thick and full of flavour. I don’t ever eat it with bread but if I did I would probably toast a slice of sourdough. It is so satisfying and it is also  immensely filling and to top it all of it it is really good for you too!
